Liquid isinglass is a natural fining agent derived from fish swim bladders, used to clarify beer, wine, and cider. It contains collagen, which carries a net positive electrical charge at fermentation pH levels. This electrical charge attracts negatively-charged yeast cells and proteins, forming large aggregates that settle to the bottom of your fermenter.
How It Works and Application
 
By aggregating suspended particles, liquid isinglass rapidly clarifies your brew, often producing "bright" (brilliantly clear) results in just 2 to 3 days. It is particularly favored in the production of traditional British ales and craft beers because it clarifies the liquid without stripping away essential hop aromas and flavors.
Application Steps
  • Timing: Ensure that primary fermentation is completely finished and gravity readings are stable.
  • Dosage: Typical dosing ranges from 10 to 20 mL per 5 gallons of beer (or about 2 oz for 12 gallons).
  • Temperature: Isinglass is highly temperature-sensitive. For the best results, chill your fermented beverage to below 40°F before adding it.
  • Mixing: Gently but thoroughly stir the liquid isinglass into your secondary fermenter, taking care not to introduce excess oxygen.
Storage and Sourcing
Because liquid isinglass is a natural, perishable protein, it must be stored tightly sealed in a refrigerator (typically between 40°F and 50°F). It must never be allowed to freeze. Most commercially available bottles have a refrigerated shelf life of roughly 6 months
