Serve chilled and enjoy on its own, or serve alongside creamy cheesecake, a cheese plate featuring toasted nuts and honey drizzle, or mix with vodka and garnish with frozen grapes for an Icewine Martini.

Aging: Best enjoyed within three months, though it will age beautifully if you can resist it.

Ice wine is expensive due to the extremely low yield of concentrated juice per grape, requiring far more grapes for one bottle compared to regular wine. The labor-intensive process involves harvesting frozen grapes by hand at night, an all-natural risk of pests and weather, and a lengthy fermentation period. These significant production challenges and risks lead to a luxury product with high costs, often sold in smaller half-bottle sizes.

One of the reasons ice wine is so coveted is its exceptional aging potential. Thanks to its high sugar content and balanced acidity, properly stored ice wine can develop even more complex flavors over time. Some bottles can be enjoyed for decades, making them a prized addition to any wine cellar.
  • Low Yield:
    Frozen grapes yield very little juice because the water content remains frozen, resulting in extremely low volumes of concentrated sweet juice. 
     
  • High Grape Volume:
    It takes several times more grapes to produce a single bottle of ice wine than it does for a standard wine. 
     
  • Labor-Intensive Harvest:
    Grapes are harvested by hand in the middle of the night or early morning, only when temperatures are below freezing, which is a difficult, time-sensitive, and cold process. 
     
  • Natural Risks:
    Leaving grapes on the vine for extended periods to freeze exposes them to threats from birds, wildlife, rot, and unpredictable weather, which can completely destroy a harvest. 
     
  • Lengthy & Arduous Winemaking:
    The fermentation process for ice wine is significantly longer than for regular wines, requiring extensive monitoring and investment. 
     
  • Geographic Limitations:
    The requirement for consistently cold winter temperatures restricts ice wine production to only certain regions, such as Canada and Germany, further limiting its supply. 
     
  • Luxury Product:
    The combination of these challenges creates a rare and sought-after luxury item, leading to a premium price for the final product.
